It is remote from pollution sources and has a perfect climate for the production of the robust olive oils for which the region is famous. Puglia is Italy's most abundant olive-producing region. In contrast to the industrial production methods of the large growers, Filippo Tandoi takes the approach of an artisan, glorying in the distinctive qualities of his oil that are the result of the unique soil, slope and climactic conditions of the Murgia. The specialty of Thuya organic olive oil is its delicately balanced elements: profumo (aroma), pizzicata (peppery flavor), amaro (piquant or bitter flavor), frutta (fruity flavor) and corpo (body). The oil is described as haveing a medium fruity flavor, with bitter sensations and sweet almond and artichoke aftertastes. Great for cooking and for salads.
